Whole-Wheat Lemon Blueberry Mini-loaves With Lemon Vanilla Bean Glaze

These mini-loaves are da bomb.

Fresh lemon and blueberrys, topped off with a lemon-vanilla glaze. And they're healthy beacause they are whole-wheat! And they are 100% our own recipe too!

It's nice to bake them in mini-loaves because everyone gets their own serving. Good for traveling!

They look very pretty too, especially with the glaze. They taste even better! 

These are good for summer with their fresh fruity lemony-ness and blueberry-ness. And whole-wheat-ness.


Try these soon! They are quite easy to make, just add dry and wet ingredients and mix!

Ingredients:

2 cups whole wheat flour
1/2 cup of sugar
1 packet of vanilla pudding mix (we used sugar-free)
1 teaspoon each of baking soda and baking powder
3 eggs
1 teaspoon of vanilla
1/2 teaspoon salt
1/2 cup oil
1/2 cup dry milk
1 cup water
1 lemon zest and juice
1 cup blueberries

Glaze

1 cup powdered sugar
Zest of one lemon
1/4 of a vanilla bean

Directions:

Preaheat oven to 350 degrees. 

Add all dry ingredients to a mixer bowl, mix, then add wet ingredients and mix. Carefully add in blueberrys.
Bake for 20-25 minutes.

Directions for Glaze:

Add powdered sugar, lemon zest, vanilla bean (scrape the insides) and mix.

Enjoy, and if you can, serve warm.
